March, St. Patricks Day, and hopefully the last few weekends of winter for this year. It seemed to me, potato pancakes would be a great dinner, with applesauce and sour cream. Cheap, yummy and filling! Oh yes, Manitoba Farmers Sausage, to give a salty flavour.
Potato Pancakes Nancys way
4 large potatoes grated
1 onion, chopped fine
2 tbsps. flour
2 eggs
sprinkle of salt and pepper
canola oil to cover bottom of frying pan
Combine grated potatoes, onion and add in flour, 2 eggs, salt and pepper and mix together until it binds well.
Heat oil in pan at medium high, and add batter by large spoon ful. Fry until you can see the edges are getting golden and flip over. Fry until crispy and golden, drain on paper towel and serve piping hot with applesauce, (from my own apples left from last season) and sour cream.
Yummy and even my prince ate some!!
