Recipe Time: What you have on hand Slow Cooker Chicken chili

Needed to come up with something for a Valentines Pot Luck, and this is what I invented: Super healthy with ground chicken and veg.  I need more time to do the things that really count, like snow ball fights in my back yard with the Gman.  I Thought I would pass it along to all the moms and folks I know who have way to much on the go:

Chicken Chili

1 pound ground chicken
1 onion diced
2 stalks celery diced
3 cloves garlic chopped
1 large can diced tomatoes
1 tsp cumin
1 tbsp Siracha sauce
1 tsp cayenne
2 cups frozen corn niblets

Put frozen ground chicken in  the slow cooker with onion, garlic and celery to low heat, add canned tomatoes and spices. Leave on low for 6-8 hours, stir and add kidney beans, no need to drain. Dont lose the goodness by draining.  cook for an hour and add the corn, cook one more hour.

Serve this with whole wheat buns or nacho chips.  Will serve 6-8 people.
